Cuban Tostones Stackers - A Street Food Inspired Quick and Easy Dinner
Looking for a simple gluten free dinner to satisfy those food truck cravings? Well, look no more! This quick and easy recipe is perfect for those nights you want something super delicious without having to put in a lot of effort. I look at these as a sort of a deconstructed cuban sandwich, and they are completely gluten free! In my house, we typically eat three or four to fill us up as a main dish, and pair it with a salad or rice and beans as our side. Peep below for ingredients and method:
Frozen tostones (I go with Chiquita or Publix brand) - 3-4 per person for 1 serving
Your preferred frying oil (I use vegetable)
1/2 pound thinly sliced cooked ham
1/4 pound thinly sliced roasted pork
Sliced swiss cheese
Cornichons/gherkins (or your preferred pickle product)
Mayo and mustard
First, pour a thin layer of oil, enough to just cover the bottom, in your frying pan and heat over medium
Once oil is ready, fry frozen tostones directly from freezer - do not thaw! Watch out for oil popping. If it is popping way too much, lower your heat.
Meanwhile - turn on your oven broiler to low
Fry both sides of tostones, about 3-4 minutes until golden brown. Then remove from pan and drain on a paper towel
Next, arrange tostones on a baking sheet and top them with one slice of ham and spread a very thin layer of mayo and mustard. Top that ham slice with one slice of pork and one slice of swiss cheese. (*Pro tip- fold slices in half or in quarters to fit atop the tostone as pictured above.)
Next, place baking sheet in oven under broiler just long enough to melt the cheese to bubbly goodness.
Remove from oven and top with a cornichon and skewer, or your preferred sliced pickle product.
