Gluten Free Sesame Chicken Crispy Asian Salad
On a recent trip to Whole Foods, their Sweet Carrot Ginger Miso dressing caught my eye and I knew I had to craft the perfect recipe to accompany it. The resulting dish manifested itself in the form of this refreshing, savory and hearty salad packed with flavor. Check out the full recipe and instructions below!
*Note- If you prefer to make this salad vegan, just switch out the chicken for tofu! The dressing is vegan as well.
Two Romaine Hearts, chopped
1/2 cup of sliced white mushrooms
1/3 cup thinly sliced red onions
1 small zucchini, chopped
1 large carrot, thick sliced
Whole Foods Brand Sweet Ginger Miso Dressing (found by the refrigerated dressings)
Sesame seeds and green onions for garnish
4 boneless skinless chicken thighs (can sub 2 breasts if you prefer white meat) patted dry and cut into small 1" chunks
1/3 cup corn starch
1 tsp Salt
1/2 tsp pepper
3 tablespoons vegetable oil
1/4 cup honey
1/4 cup low-sodium tamari (can use soy sauce if you're not gluten free)
3 tablespoons rice wine vinegar
1 tablespoon Sriracha
1 large clove garlic, finely grated
1 teaspoon finely grated ginger
1 1/2 teaspoons toasted sesame oil
Mix cornstarch salt and pepper in a large bowl. Toss chicken pieces in mixture and shake off excess
Heat vegetable oil over medium high heat in a large sauté pan (if you have a smaller pan, divide the oil and cook chicken in two equal batches)
Add chicken to the hot oil, and cook until crispy and golden brown, about 5-7 minutes
While the chicken cooks, whisk together honey, tamari, vinegar, sriracha, garlic, ginger and sesame oil in a medium bowl
Once chicken is cooked through, add the sauce mixture to the pan and reduce until a bit thickened, about 2 minutes. Remove from heat
Now Build out the salad. Start with a base of chopped romaine, then spread around mushrooms, onions, carrots and zucchini.
Top the salad with chicken and garnish with green onions and sesame seeds
Finally, dress with Sweet Ginger Miso Dressing to your preference, dig in and enjoy!
